The distinctive, non-vintage wine (4.5*) I tasted recently is rare – only 1,000 bottles were produced. Made from Chardonnay, it was matured for five and a half years on its yeast lees. Pale straw, it is mouthfilling, complex and slightly austere, with strong, vigorous, yeasty, toasty flavours, crisp, basically dry (5 grams/litre of residual sugar) and lengthy.
